It has taken me awhile to get back to my weekly menu planning. Life gets crazy in summer and we tend to just throw something together, either on the grill or lots of salads. Then school started and I desperately needed to get my ducks in a row!!
Finally, I've got it together enough to create a menu AND get it posted. Woohoo!! (Never mind that the 1st quarter of school has come and gone already!)
On the Menu:
Monday - Broccoli & Ham bake (new recipe-can't wait to share the results!), whole wheat rolls
Tuesday - Soup and Sandwich night - either Clam chowder or Broccoli Cheddar
Wednesday - Crockpot Night - Sweet & Sour Chicken w/ rice
Thursday - Leftovers or Breakfast
Friday - Steak and baked potatoes, green salad
Saturday - Lasagne, green beans and French bread
Sunday - Clean out the fridge! or Pizza
Happy Cooking!

Menu Monday
Wylie was off to High Power Soccer camp this morning at our church thru the Awana program! He was so excited to go and I was so proud to see my budding athlete! I will post pics on Wednesday of his adventure.
Menu planning tips:
#3 - Buy in bulk, separate into smaller packs at home and freeze.
Ex: I buy 6 gallons of milk in one trip to Costco and freeze it. I also buy the large packs of hot dogs, american cheese, bread, lunch meat and butter. I put the hot dogs and cheese into smaller packs right away.
#4 - If you run out of something or need 1 thing to complete a recipe, DON'T run to the store. Try to find a substitute or make a different recipe. Impromptu trips to the store almost always end in buying more than you came for. Plan ahead and have what you need on hand!
This week's menu:
Monday:
Breakfast - Kid's choice
Lunch - Sandwiches, pretzels, apple
Dinner - Leftovers from BBQ
Tuesday:
Breakfast -Oatmeal w/ banana
Lunch- Ramen noodles,
Dinner - Grilled kielbasa, brown rice, grilled veggies
Wednesday:
Breakfast -Smoothies & Pumpkin bread
Lunch- Egg salad sandwich, chips, fresh veggies
Dinner - Chicken Alfredo, spaghetti squash, green salad
Thursday:
Breakfast -Cold cereal, bagel w/ cream cheese
Lunch- Lunchables
Dinner - Lettuce wraps w/ sweet potato fries
Friday:
Breakfast -Whole wheat pancakes & bacon
Lunch- PB&J, goldfish, carrots
Dinner - Calico Beans, summer veggie salad
Saturday:
Breakfast - Homemade Granola bars & yogurt
Lunch - Dad's cooking
Dinner - Steak, potatoes/cauliflower & salad

Menu Monday
How did Monday sneak up on me so fast??
PreacherMan was off to work early this morning - and this is most likely his last trip to Houston (more on that later), which means more family time for us and less stress/wear on Mama's nerves!
This weeks Menu:
Monday - Beef tips in gravy w/ onions and carrots over rice w/ fresh greens from garden
Tuesday - Grilled chicken w/ grilled veggies and spaghetti squash (that didn't get eaten last week)
Wednesday - probably sandwiches as we are hoping to go to the Knights of the Realm show at the county fair
Thursday - Leftovers
Friday - Paleo Spaghetti w/ garlic toast and green beans
This past spring I found out I am super sensitive to night shades. At first I had no clue what the doctor was talking about. But quickly found out that the night shade family includes: white potatoes, tomatoes, peppers, eggplants, paprika, cucumbers and tobacco - read more about them here.
I've always loved peppers, potatoes and cucumbers but I miss tomatoes the most. Now I do have them once in a while BUT the reason I can't have them daily is because it causes my hands and feet to crack. I've had dry skin all my life and I've tried multiple dermatologists, special lotions and soaps and anything else I could think of. After being off night shades for about 3 weeks I noticed my hands healing and now my skin is smooth. And even though I miss salsa and all the other tomato based foods I used to eat - not having my hands crack and bleed is worth it!
Enjoy your Monday!

Menu Monday
Menu Plan Monday
We've been eating a lot of salads lately- fruit, lettuce and other, cold and easy to put together. There is a heat wave here, taking us into the 90s for the past few weeks (and lots of fires around!). I know that isn't hot compared to other places but growing up here.....85* is my limit! Although I do seem to be getting used to the warmer weather, it's not bothering me as much as it used to. And it does help that it cools off into the low 50s, sometimes high 40s at night.
So for the week of July 9th:
Monday - Turkey roll-ups, fresh green beans sauteed w/ mushrooms and onions
Tuesday - Hot dogs and cheddar zucchini pancakes w/ fresh peaches
Wednesday - Fruit salad w/ cottage cheese
Thursday - Beef kabobs w/ cous cous and roasted broccoli/cauliflower
Friday - Spaghetti squash w/ marinara sauce or white sauce & garlic toast
Saturday - Pizza!
Sunday lunch - Baked Ham w/ twice baked potato casserole & fresh green beans
Sunday dinner - Chef Salad

We will be having lots of Easter leftovers this week - makes it easy on me for sure.
Just a little update of the 30 Day Spring Cleaning Challenge:

April 1st - Weekly Menu
It has been difficult to menu plan with only 1 adult + 3 small children eating dinner these days. It was just so much easier with 2 adults (+ kids)! Now I pay much more attention to the overall size of the dish and many have to be cut in half or more to ensure we aren't drowning in leftovers after just a couple meals!
April 2nd Monday - I don't know! :) I still haven't decided what to cook tonight.
Tuesday - Tacos!
Wednesday - Ham & Rice hot dish
Thursday - Hashbrown Egg Bake
Friday - Hamburger skillet dinner
Saturday - Leftovers
Sunday - Easter Dinner with family
See ya next week, hopefully!!!

March 5th-11th Dinner Menu
We survived our first week without PreacherMan! And now we are onto another.
A ministry doesn't just support itself so PreacherMan is back to work outside the home; and his new job keeps him away from home Monday thru Friday. It can be overwhelming with him gone but I am forever grateful that he has a skill that can land him a good paying job in this economy!
Last week we kept busy with plans everyday! Monday was a clean house day; Tuesday we did some coupon shopping and other errands; Wednesday we met our friends at the Museum of the Rockies and then had lunch out afterwards; Thursday we had a different friend over for playdate; and Friday we had planned to go to Story-time but mama was tired! So we stayed home.
It is a bit of a challenge to meal plan with 1 adult, 1 kid, 1 preschooler and 1 toddler! Last week I went for quick and easy, kid-friendly dinners. But this week I want a little more variety (and because I am trying super hard to watch my caloric intake!) we are back to more "real" meals!
Monday - Shredded Beef Enchiladas (made these up a couple weeks ago from some leftover roast and put them in the freezer!) w/ refried beans
Tuesday - Pork chops, sauerkraut and potato bake
Wednesday - Turkey Kielbasa and Soup
Thursday - Breakfast night
Friday - Grilled Chicken Alfredo w/ frozen veg medley
Saturday - Hamburgers on the grill! w/ all the fixings
Sunday - Out to dinner w/ my newly engaged brother and his fiance!!!
Happy Cooking!

Menu Nov 27-Dec 3
This last week the boys enjoyed a 2-day stay at Gram and Gramps. I had plans to get going on my sewing projects for our Homemade Christmas this year but baking for Thanksgiving dinner, shopping and visiting my friend with her brand new baby girl came first!
We enjoyed Thanksgiving dinner at my parents. It was quiet with just our immediate family but nice and relaxing. Yesterday (Sat) we cut up a beef with my Grandad. A few weeks ago we did one for us and my brothers. My dad has a large airplane hanger/shop that allows us to do all the work ourselves. As a little girl it was a part of life to cut up a few deer and/or elk every fall. The past few years we've done a beef as it feeds more and some do not care for the wild game taste. I look forward to it every year as a tradition to get together with the family and fill up our freezers!
Because it was a busy week with 1/2 the family gone we did a lot of leftovers and easy dinners. This week will put us back on our normal schedule.
Sunday - Fresh! Steaks and baked potatoes
Monday - Wild caught Alaskan Halibut from my awesome cousin Beth! w/ Couscous and steamed veggies
Tuesday - Potato & Keilbasa Soup, green salad, rolls

Wednesday - Lasange, Green Beans, Garlic Bread
Thursday - Egg Bake and fruit
Friday - Oriental Chicken Wraps
Saturday - Chili-sketti
