We survived our first week without PreacherMan! And now we are onto another.
A ministry doesn't just support itself so PreacherMan is back to work outside the home; and his new job keeps him away from home Monday thru Friday. It can be overwhelming with him gone but I am forever grateful that he has a skill that can land him a good paying job in this economy!
Last week we kept busy with plans everyday! Monday was a clean house day; Tuesday we did some coupon shopping and other errands; Wednesday we met our friends at the Museum of the Rockies and then had lunch out afterwards; Thursday we had a different friend over for playdate; and Friday we had planned to go to Story-time but mama was tired! So we stayed home.
It is a bit of a challenge to meal plan with 1 adult, 1 kid, 1 preschooler and 1 toddler! Last week I went for quick and easy, kid-friendly dinners. But this week I want a little more variety (and because I am trying super hard to watch my caloric intake!) we are back to more "real" meals!
Monday - Shredded Beef Enchiladas (made these up a couple weeks ago from some leftover roast and put them in the freezer!) w/ refried beans
Tuesday - Pork chops, sauerkraut and potato bake
Wednesday - Turkey Kielbasa and Soup
Thursday - Breakfast night
Friday - Grilled Chicken Alfredo w/ frozen veg medley
Saturday - Hamburgers on the grill! w/ all the fixings
Sunday - Out to dinner w/ my newly engaged brother and his fiance!!!
